Five Spice Chicken

Ingredients
- 200g chicken thighs, diced
- 2 tbsp soy sauce
- 2 tsp cornflour
- 1/2 tsp Chinese 5-spice
- 2 tbsp oil
- 250g stir-fry veges
- 50g cashew nuts, toasted
- 100ml hot water
Method
- Mix chicken, 1/2 tbsp of the soy sauce, cornflour and 5-spice in a non-metallic bowl and leave for 10 mins
- Mix the remaining soy and hot water in a jug
- Heat oil in a large, hot frying pan and cook chicken for 3-4 mins
- Reduce heat to medium and add veges, water and soy sauce mixture and cook for 2 more mins.
- Serve with cashews on top
